Everlinda Salgado Herrera is proud to be from San Basilio de Palenque, Colombia, believed to be the first town in the Americas liberated from slavery. Legend has it that, after abolition, residents named a delicious, coconut-laden treat "alegría" to honor the sweet taste of freedom. It's one of several sugary delights that Everlinda makes and sells, like her mother and grandmother before her.
